Lucie's no-fail banana muffins
From KM4DevWiki
Are your bananas threatening mutiny on your kitchen counter? This works best with bananas that are - well - passed their due date. The mushier, the better.
Ingredients & Directions
Ingredients:
- 250 ml (1 cup) all-purpose flour
- 250 ml (1 cup) whole wheat flour
- 175 ml (3/4 cup) brown sugar
- 125 ml (1/2 cup) walnuts, chopped
- 10 ml (2 teaspoons) baking powder
- 5 ml (1 teaspoon) cinnamon (I usually add a bit more because I loooove cinnamon)
- pinch of salt
- 2 medium size bananas, ripe and squished into puree with a fork
- 2 large eggs
- 250 ml (1 cup) milk
- 75 ml (1/3 cup) vegetable oil (any kind will do but I often use sunflower)
Directions
- Preheat oven at 200 Celcius (400 F)
- Mix the dry stuff together (flours, sugar, walnuts, baking powder, cinnamon, salt)
- In another bowl, mix the squished bananas, the eggs, the milk and the oil. Stir all of those ingredients well
- Add the dry mixture to the banana mixture and stir well
- Butter a couple of muffin pans (unfortunately, usually makes about 15 muffins so too much for 2 pans, not enough for 3... arumph)
- Bake for about 15-20 minutes (but check them occasionally)
- Let cool just a bit but enjoy warm, with or without butter
